Ingredients:
For the Salmon:
-4 salmon fillets (skin-on or skinless, as you prefer)
-Salt and pepper to taste
-1 tablespoon olive oil
-1 tablespoon fresh lime juice (optional, for extra tang)
For the Honey Pineapple Glaze:
-1/2 cup fresh pineapple, finely chopped or crushed (canned pineapple works too)
-2 tablespoons honey (preferably raw or mild)
-1 tablespoon soy sauce (or tamari for gluten-free)
-1 tablespoon Dijon mustard (optional for a subtle tang)
-1 teaspoon fresh grated ginger (or 1/2 teaspoon ground ginger)
-1 clove garlic, minced
-1/2 teaspoon chili flakes or a pinch of cayenne (optional, for heat)
-1 tablespoon fresh cilantro or parsley (optional, for garnish)
Instructions:
1.Prepare the Salmon:
Preheat your oven to 400°F (200°C). If using a skillet, you can cook on the stovetop and finish it in the oven later.
Pat the salmon fillets dry with a paper towel and season both sides with salt and pepper.
Optionally, drizzle the fillets with a little lime juice to add brightness and a bit of tang.
2.Make the Honey Pineapple Glaze:
In a small saucepan over medium heat, combine the chopped pineapple, honey, soy sauce, Dijon mustard (if using), ginger, garlic, and chili flakes (if using).
Bring the mixture to a simmer, stirring occasionally, and let it cook for about 5-7 minutes. The sauce should thicken slightly and become syrupy. If you want a smoother glaze, you can use a spoon to mash some of the pineapple or blend the mixture.
Taste the glaze and adjust the sweetness or saltiness by adding more honey or soy sauce as needed.
3.Cook the Salmon:
Heat the olive oil in a large oven-safe skillet over medium-high heat. Once the pan is hot, add the salmon fillets, skin side down (if using skin-on). Sear for about 2-3 minutes until the skin is crispy.
Flip the fillets over, then spoon some of the honey pineapple glaze over the top of each fillet.
Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the salmon is cooked through and flakes easily with a fork (internal temperature should be 145°F/63°C). If you're not using an oven, reduce the heat and cover the skillet, letting the salmon cook through on the stovetop for about 5-7 minutes, basting with the glaze.
4.Serve:
Once the salmon is cooked, remove it from the skillet and place it on plates. Drizzle with any remaining honey pineapple glaze.
Garnish with fresh cilantro or parsley for color and freshness. Optionally, serve with lime wedges on the side for extra tang.
