Ingredients:
- 4 firm apples, halved and cored
- 1/2 cup crumbled feta cheese
- 1/4 cup dried cranberries, chopped
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1 teaspoon fresh thyme leaves
- Salt and pepper to taste
- Optional: Chopped walnuts for garnish
Instructions:
1. Preheat the oven to 375°F (190°C)
2. Slice the apples in half and scoop out the core to make a small well in each half
3. Arrange the apple halves in a baking dish, cut-side up. Drizzle with olive oil, then fill each center with feta crumbles and chopped cranberries
4. Bake for 15-20 minutes, until the apples are tender and the feta begins to melt
5. Remove from the oven, drizzle with honey, and sprinkle fresh thyme on top. Add salt and pepper to taste
6. If desired, garnish with chopped walnuts for extra crunch
Serve warm, as an appetizer or light dessert!
